Vanilla Cupcakes Recipe

Recipe Makes - 12 Cupcakes

Step 1

Preheat your oven to 180°C

Step 2

Put cupcake liners in your muffin tin

Step 3

Whisk Flour and baking powder together in a large bowl and set aside

Step 4

Combine the milk and butter in a heat proof container, and heat until the butter is melted. Note: Be careful not to let the milk boil or bubble. Leave in microwave/covered on stovetop to keep warm

Step 5

In a seperate, sturdy glass bowl, mix eggs on high for 30s with a handheld beater

Step 6

Add in the sugar over 30s, with the beater still going

Step 7

On high speed, beat until the mixture is tripled in size, or for 8 minutes. It will be almost pure white

Step 8

Add ⅓ of the flour at a time, mixing until just combined

Step 9

Pour milk-butter, oil, and vanilla into the empty flour bowl, and add 3 cups (vaguely) into the mixture. Whisk vigourously until smooth, it will look foamy.

Step 10

Slowly add the milk mixture into the batter and mix with your beater on speed 1 until just combined.

Step 11

Scrape the sides of the bowl and ensure everything is combined evenly.

Step 12

Divide batter evenly into cupcake tins, ensuring they are around ¾ full. Place in oven and leave to cook for 22 minutes, or until golden and a toothpick comes out clean.
