Salted Caramel Buttercream

Recipe makes - 20-24 servings

Step 1

The base for this recipe is homemade caramel sauce. In a heavy bottomed saucepan combine butter, milk and sugar on low heat. Do not rush this step, if you do it will be grainy. Stir often, and when the butter is melted stir continuously for at least a minute

Step 2

Increase the heat to medium and do not stir. Cook for 3-6 minutes, until bubbles spread across the entire surface of the caramel, and the mixture turns an amber colour

Step 3

Remove from the heat and cool until room temperature in a heatproof container

Step 3

When the caramel is room temperature, combine it in a bowl with the icing sugar and mix until desired consistency. If it is too thick, add 1 tsp of milk at a time
