Lemon Slice
Recipe makes - 1 20x20cm tin of slice
Step 1
Preheat your oven to 180°C
Step 2
Mix 1 cup of the flour and ¼ cup of the sugar in a large bowl
Step 3
Add butter and cut in until mixture looks like coarse crumbs
Step 4
Press mixture into tin and bake 15 mins until crust is golden
Step 5
Combine lemon juice, lemon peel, egg, the remaining ¼ cup of flour and ¾ cup of sugar in a large bowl and whisk until smooth
Step 6
Pour the lemon mixture over the crust
Step 7
Bake for another 15 minutes or until completely set. Allow to cool before topping with icing sugar (optional) and serving.
