Biscoff Cookie
Our kinder stuffed cookie isn't like the others. We fill ours with, you will never guess... Kinder!
I have made this recipe to perfection. After many failed attempts I believe this is the best it can be.

Ingredients:
- 115g unsalted butter, cold
- 190g brown sugar
- 1 tsp vanilla extract
- 1 large egg, cold
- 245g plain flour or all purpose flour
- 1 tbsp cornflour or corn starch
- 1/2 tsp baking soda
- 1/4 tsp salt
- 100g milk chocolate, roughly chopped
- 100g white chocolate, roughly chopped
- 70g Lotus Biscoff cookies, roughly chopped
- 80g Biscoff cookie butter
Make the cookie dough:
- In a large mixing bowl, add cold butter and sugar. Beat with an electric mixer on medium speed until combined.

- Add vanilla and egg. Beat again until combined.
1 tsp vanilla extract, 1 large egg - Add flour, cornflour, baking soda and salt, and beat on a low speed until soft cookie dough forms.
245g plain flour, 1 tbsp cornflour, 1/2 tsp baking soda, 1/4 tsp salt - Add chopped chocolate and cookies and beat briefly.
100g milk chocolate, 100g white chocolate, 70g Lotus Biscoff cookies - Finally, add Biscoff cookie butter and mix very briefly.
80g Biscoff cookie butter
Roll and bake the cookies:
- Preheat oven to 180°C. Line two baking trays with baking paper.
- Scoop out cookie dough, roughly 2 tablespoons per cookie, and place on prepared oven trays, leaving room for the cookie to spread slightly.
- Bake cookies for 12-14 minutes or until golden brown.
- Leave cookies to cool completely.
