Oreo Stuffed Cookie


Cookie This oreo cookie is a new one of mine and I already love it! The oreo in the middle is to die for. This is the new favourite for the family.

Ingredients:













Make the cookie dough:

  1. In the bowl of a stand mixer (or in large bowl using electrical mixer), cream together butter and sugars until light and fluffy. Scrape sides of bowl.
    226g unsalted butter , 100g sugar, 200g brown sugar tightly packed

  2. Add eggs and vanilla extract. Beat until well-combined.

  3. In a separate bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
    380g all-purpose flour, 2 tsp cornstarch, 1 tsp baking soda, 1 tsp baking powder, ½ tsp salt

  4. Gradually add dry ingredients to wet, stirring until well-combined.

  5. Fold in 1 cup of chocolate chips, reserve remaining ½ for later.

  6. Place 5 Oreo cookies in a small plastic bag and use a rolling pin or mallet to break into small pieces. Use a spatula to fold cookie bits into dough.

  7. Cover dough and chill in refrigerator for 15-30 minutes.


Roll and bake the cookies:

  1. Scoop 1 ½ tbsp of dough, flatten between your palms, and place on top of one Oreo cookie. Wrap another 1 ½ tbsp of dough around the bottom of the cookie and mold the dough around the cookie until it's completely covered (add more dough, if needed). Repeat with remaining Oreo cookies.

  2. Place dough on a baking paper lined plate and freeze for 20-30 minutes. Meanwhile, preheat oven to 190°C.

  3. Once dough has chilled and oven is preheated, place dough on baking paper lined tray, spacing each cookie a few cm apart, and bake for 11 minutes.

  4. Within 2 minutes of removing cookies from oven, gently place the remaining chocolate chips on top of each cookie.

  5. Allow to cool before enjoying.
